Ultimate Christmas Fruit Cake Recipe

Ingredients:

Makes one 8"x8"x3" square pan:

• 700g mix fruits (consist of cherries, apricots, raisins, plums, blackcurrants)
• 50g glazed red cherries
• 50g glazed green cherries
• 1 tbsp orange zest
• 180ml whiskey (or brandy, rum, gin, or orange or pineapple juice for non-alcohol)
• 125g pecans, chopped
• 125g cashews, chopped
• 283g all-purpose flour or plain flour
• 2 tsp mixed spice **
• 1/4 tsp salt
• 225g unsalted butter, softened
• 225g light brown sugar
• 4 eggs
• 1 tbsp molasses (or jam)
• 2 tsp vanilla extract
• 1 tbsp orange juice
• 2-3 tbsp flour (for coating the mix fruits & nuts)

** If you don’t have mixed spice, you can mix:

• 1 tsp cinnamon powder
• 1/4 tsp nutmeg powder
• 1/4 tsp cloves powder
• 1/4 tsp ginger powder
• 1/4 all spice powder
