Super Moist Christmas Fruit Cake

Ingredients for the cake:
- 225 grams Unsalted Butter (room temperature)
- 225 grams Dark Brown Sugar
- 4 large Eggs (room temperature)
- 225 grams All Purpose Flour
- 1 tsp Allspice Mix
- ½ tsp Nutmeg
- ½ tsp Salt
- ½ tsp Baking Powder
- 130 ml Caramel (homemade)
- 1 Lemon (zest)
- 1 Orange (zest)
- 1 tbsp Pure Vanilla Extract
- 900 grams Soaked Dry Fruits
- 25 grams Almonds (toasted and chopped)
- 25 grams Walnuts (toasted and chopped)
- 50 grams Whole Hazelnuts (toasted)
Ingredients for the soaked dried fruit:
- 100 grams Black Currants
- 100 grams Prunes
- 100 grams Dried Apricots
- 100 grams Figs
- 200 grams Mixed Peels
- 150 grams Dates
- 300 grams Sultanas (Raisins)
- 50 grams Candied Ginger
- ¼ cup Orange Marmalade
- 350-400 ml Cointreau, Rum, Brady, Whisky
