Breakfast Muffins Gluten & Dairy Free

Ingredients (will make 12 cupcake sized muffins):
- 100g coconut sugar
- 100g coconut oil
- 3 tbsp apple sauce (granny smith apples and some lemon juice)
- 2 tbsp oat milk
- ½ tsp vanilla
- 1 egg
- 2 medium sized ripe bananas
- 190g buckwheat flour
- 1 tsp cinnamon
- ½ tsp ginger
- ½ tsp salt
- 1 tsp bicarbonate soda
- 1.5tsp baking powder
- 50g chopped nuts (walnuts and pecans)
- mixed seeds and nuts for topping
